MY FAVORITE DRESSINGS

Following the admonitions of the Internet site that I use for the Alkaline Pattern for Eating, or APE, the only dairy products that a person should consume are fermented dairy products.  That would be items like kefir, sour cream, and yogurt.  Leaving out the sugared products would relegate a person to sour cream, plain yogurt and plain kefir.  So far, not too difficult.

That means that my salads, which generally consist of giants bowls filled with chopped raw veggies, are generally dressed with either full fat sour cream or guacamole. 

Part two:  Following the admonitions of APE, a person is told that 60 to 80% of their diet should be alkaline.  The percentage of allowable acidic ingredients provide the taste variations for the salad dressings that I make.  I love pickled beets, which contain that acidic ingredient, sugar.  Therefore, I take only a couple of slices of pickled beets, chop or mince them, and add them to about a half-cup of sour cream.  Recipe follows.


SWEET BEET CREAMY DRESSING
A few slices of pickled beets, chopped or minced
1/2 cup sour cream

Mix together.

I hope this recipe satisfies those of you who are sticklers for exactitudes. 

Variations:  Sometimes I add some minced, pickled jalapeños or some salsa.  Recipes follow.
 
 
CREAMY JALAPENOS DRESSING
A few slices of pickled jalapenos, minced
1/2 cup of sour cream

Mix together.
Ta Da!

 
 
SALSA SOUR CREAM DRESSING
1/4 cup sour cream
1 to 2 tablespoons salsa – choose your favorite spiciness. 

Mix together
Ta Da, Again!

And finally:


WORLD FAMOUS GUACAMOLE SALAD DRESSING
I squeeze out 1/4 to 1/2 cup of ready-made guacamole from one of those nifty little plastic bags.  Make sure to read the list of ingredients so you don’t end up ingesting anything that has more than 14 syllables in its name.  If you make your own guacamole, simply mash up a ripe avocado and mix in some or all of the following ingredients – lemon juice, diced onion, chopped tomatoes or canned diced tomatoes, parsley, jalapenos, cilantro, and kitchen sink.
